The new Del Monte Southwestern-Style Petite Cut Diced Tomatoes are the perfect way to spice up main dishes and snacking recipes. We have been having a lot of fun coming up with new concoctions. The other day we dumped them over chicken in the crockpot and cooked for a few hours—-Simple and YUMMY!

What’s even better is that the Del Monte canned tomatoes, fruits and vegetables contain the same essential nutrients as fresh varieties. As a matter of fact, the majority of Del Monte products are picked at the peak of ripeness and canned on the same day, to ensure nutrients and flavors are locked in.

One recipe that we can’t wait to try is the Fiesta Chili Bake

Ingredients:

1 lb lean ground beef

1 chopped onion

1 can (14.5oz) Del Monte Petite-Cut Diced Tomatoes with Green Chilis-Original

1 Packet Chili Seasoning

1 Can (15 oz) no-salt or low-sodium black beans, drained

1 package (8.5 oz) corn bread mix (plus ingredients to prepare)

Directions:

1.) Cook meat and onion in skillet, drain

2.) Add undrained tomatoes, chili seasoning, beans and 1/2 cup of water. Cook 5-6 minutes, stirring occasionally until slightly thickened.

3.) Meanwhile, prepare batter for cornbread mix according to package directions.

4.) Spoon chili mixture in 8×8 inch or 2 qt. baking dish. Spoon cornbread batter over top.

5.) Bake, uncovered at 400 degree F, 20-25 min. or until golden brown.

Prep Time: 10 minutes

Cook Time: 25 minutes

Serves 4-6
